A very Italian lunch

With the change in seasons and the spike in temperature, I find myself craving fresh and light food  and pushing away all of the winter stodge that I would’ve gobbled up a month ago. 

It’s arrivederci to the soups and stews and bella di rivedervi to the fruit and veg!!

So with that in mind I’m going to show you 2 speedy recipes that you can whip up in 10 minutes for the perfect Italian lunch. 

Number #1 is a recipe for zucchini that I lovingly stole from a student whose family hails from Napoli.

Number #2 is a recipe for tomatoes my old Abruzzese housemate showed me when we were short on time to mangiare.

So if you’re stuck for something to eat and you’ve not got much time for lunch, try these recipes out for yourself!! 

Number #1 : Zucchini Napoli Style 

Ingredients (serves 2):

  • 2 large zucchini
  • olive oil
  • pinch of salt and pepper
  • half a clove of garlic
  • handful of basil


  1. Finely slice the zucchini into little round disks.
  2. Chop the garlic into small pieces.
  3. Put a splash of olive oil in pan on a high heat, add the garlic and stir for 1 minute.
  4. Add the zucchini to the pan.
  5. Add a pinch of salt and good sprinkle of pepper to the zucchini and stir for a few minutes.

  6. Leave the zucchini to fry until they are golden, continue to flip them over to make sure both sides are cooked.
  7. Chop the basil and it to the zucchini just before serving.

Number #2: Herby Tomato Salad

Ingredients (serves 2):

  • small bowl full of cherry tomatoes
  • olive oil
  • pinch of salt
  • a herb of your choice (basil/parsley/oregano)



  1. Chop the tomatoes into halves and add a pinch of salt
  2. Chop the herb (I’ve used parsley) and add to the to tomatoes
  3. Cover the tomatoes with a good glug of olive oil and stir


Serve these dishes with some cold cut Italian prosciutto or salami, some fresh Italian cheese ( stracciatella, scamorza or mozzarella) and some thick cut bread. 

And there you have it!! A Very Italian Lunch!!
